Ingredients

Nuts & Seeds:

  • ½ cup pecans

  • ⅓ cup cashews

  • ¼ cup pumpkin seeds

Tahini Caramel:

  • ¼ cup tahini

  • ¼ cup maple syrup

  • 1 squeeze lemon

  • 1 pinch cinnamon

Boosters:

  • 1 tbsp hemp seeds

  • 6 dates, pitted

  • 1 scoop Vanilla Hemp Protein powder (I use Prairie Naturals)

Instructions

  1. Prepare the tahini caramel: In a small bowl, mix tahini, maple syrup, lemon, and cinnamon until smooth.

  2. Blend the nuts & seeds: In a food processor, combine pecans, cashews, pumpkin seeds, hemp seeds, and dates. Pulse until finely chopped and sticky.

  3. Add the caramel: Pour the tahini caramel into the nut mixture and pulse until combined. The mixture should be sticky but moldable.

  4. Form the balls: Roll the mixture into small bite-sized balls.

  5. Chill: Place in the fridge for at least 30 minutes to firm up.

Store in an airtight container in the fridge for up to a week—or freeze for longer-term energy support.
